When I want a quick and easy dinner that I know my kids will actually eat, I break down and make these garlic bread sandwiches. They are far from healthy so serve with some fresh fruit or something to balance it out if you’re worried about that. Still, it beats the drive-through is how I look at it! Plus, it’s always a win in my house when my kids actually eat my food.
How to Make Garlic Bread Sandwiches
This makes enough for 2 loaves of garlic bread. I usually make both and just heat one up tonight and the other loaf the following night or for lunch.
Ingredients:
- 2 loaves of pre-made garlic bread from the bakery (you know the kind with the garlic butter all slathered inside)
- 1 rotisserie chicken – shredded
- 2 C shredded cheese – about one package
- 8 slices bacon – cooked and crumbled
Step 1: Preheat oven according to the directions on the garlic bread.
Step 2: When taking the garlic bread out of the foil bag, be careful, as you will be putting it back in there later. Open up garlic bread into 2 halves and make sure the garlic butter is evenly distributed on each side. Do this for each loaf. Then sprinkle the chicken on only 2 of the 4 halves.
Step 3: Sprinkle the cheese on top of the chicken.
Step 4: Add the bacon as the final layer.
Step 5: Put the garlic bread back together. Add the top that doesn’t have any toppings back onto the bottom that has all the toppings. Then put it back into the foil bag it came in.
Step 6: Put the bread in the oven for as long as the directions indicate on the garlic bread bag.
Step 7: When complete the center should be warm. Slice into sandwiches.
Enjoy!
This would be a great recipe your kids could help you make or depending on their age almost completely make themselves! Have them help with shredding the chicken then laying on the bread.
